Crunchy Top Baked Fish

Crunchy on the top and soft and juicy on the bottom, this is a fun quick preparation that will go with almost any side.

Serves 4

Cooking spray

¾ cup panko breadcrumbs

¾ cup finely grated Parmesan cheese

3 Tbsp. unsalted butter, room temperature

3 Tbsp. mayonnaise

3 scallions, thinly sliced, greens only

1½ Tbsp. lemon juice

1 tsp. Worcestershire sauce

½ tsp. hot sauce

Kosher salt and freshly ground black pepper 

1½ lb. boneless skinless cod fillets, cut into 4 pieces

 

Heat the oven to 425°F. Line a large rimmed baking sheet with foil and spray with cooking spray. 

In a medium bowl, mix together the breadcrumbs, cheese, butter, mayonnaise, scallions, lemon juice, Worcestershire sauce, and hot sauce.

Pat the fish dry with paper towels and season generously with salt and pepper. Transfer the fish to the prepared baking sheet. Divide the breadcrumb mixture of the fish and spread to cover the top.

Roast until the top is bubbling and the fish is almost opaque, about 10 minutes. Turn the broiler on high and broil until the tops are golden brown and crisp, about 2 minutes.
