Atlantic Cod Ceviche

Ceviche is a Latin American preparation of raw seafood. Soaked in a highly acidic bath of lemons and limes, it gives the fish an unbelievably fresh bright flavor. Since Iceland Catch flash freezes its cod at the height of freshness, using the cod for ceviche is safe and delicious.


Serves 4

4 cod fillets, cut into ½-inch cubes

1 cup fresh squeezed lime juice

½ cup fresh squeezed orange juice

½ medium red onion

½ large red bell pepper

1 serrano chile pepper

1/3 cup coarsely chopped cilantro

Kosher salt and freshly ground black pepper

2 Haas avocados, cubed

Plantain chips or tortilla chips for serving

In a large bowl, combine the cod, juices, onion, peppers, cilantro, a large pinch of salt and a few grinds of pepper. Cover with plastic wrap and refrigerate for at least 4 to 6 hours, stirring occasionally throughout.

Remove from the refrigerator and stir in the chopped avocado. Season to taste with more salt and pepper. Using a slotted spoon, serve in a chilled bowl with the chips.
